Chardon-Marie
Plante bisannuelle, robuste, de grande taille, dépassant le plus souvent 1 mètre - Grandes feuilles vert pâle brillantes, pennatilobées et ondulées, bordées de dents épineuses à pointe jaune très acérée et présentant à l'avers de nombreuses nervures blanches, donnant l'impression que la feuille est maculée de lait. Capitules souvent solitaires, ou groupés, entourés de grandes bractées recourbées, à extrémité très acérée, chaque bractée ayant elle-même un pourtour de petites épines - Fleurons, tous tubulés et à cinq lobes, de couleur pourpre violacé - Fruits (akènes) luisants, noirs ou marbrés de jaune, surmontés d'une aigrette denticulée en anneau à leur base.

Affectionne particulièrement les lieux secs et ensoleillés, et les sols acides - Très fréquent sur le pourtour méditerranéen et pratiquement absent au nord de la Loire (à l'exception des côtes atlantiques) et ne dépasse en principe pas 700 m d'altitude.

Composants actifs
Lignanes (Silimarine) : sont responsables de l'action hépatoprotectrice forte, régénératrice cellulaire et pour l'effet détoxifiant.
Usage
Les feuilles épineuses peuvent être cuites comme les épinards. Même les tiges peuvent être cuites de manière similaire à la compote de rhubarbe, après qu'elles aient trempé dans l'eau pour enlever leur goût amer. Les graines pressées donnent une huile comestible exquise. Puisque les substances, responsables de la protection du foie ne sont pas hydrosolubles, il est peu judicieux de préparer des infusions de graines ou autres parties des plantes. Quand il s'agit de la santé du foie le chardon-marie est le numéro un des plantes à choisir. Tout d'abord, c’est un puissant antioxydant qui protège les cellules du foie contre le stress oxydatif. 1-7 En stimulant la production de la bile, aussi bien la fonction de détoxication que la digestion est prise en charge. 8 Ce qui rend le chardon-marie unique, c'est non seulement sa capacité protéger le foie mais aussi à soutenir la régénération cellulaire, et à contribuer ainsi au maintien de la santé du foie. 9-19
